Ingredients:
For the Marinade:

1.5 pounds (700g) boneless chicken thighs, cut into thin strips
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground paprika
1 teaspoon ground turmeric
1 teaspoon ground coriander
1/2 teaspoon ground cinnamon
Salt and pepper to taste
2 tablespoons plain yogurt
2 tablespoons olive oil
Juice of 1 lemon
For the Garlic Sauce:

1/2 cup mayonnaise
2 cloves garlic, minced
2 tablespoons plain yogurt
Juice of 1/2 lemon
Salt and pepper to taste
For Serving:

Pita bread or flatbreads
Sliced tomatoes, cucumbers, and onions
Lettuce leaves
Instructions:

1. In a bowl, combine all the marinade ingredients - garlic, cumin, paprika, turmeric, coriander, cinnamon, salt, pepper, yogurt, olive oil, and lemon juice. Mix well.

2. Add the chicken strips to the marinade and coat them thoroughly. Cover and refrigerate for at least 1 hour, or preferably overnight for better flavor.

3. Preheat your grill or a grill pan over medium-high heat. Thread the marinated chicken strips onto skewers if you have them or simply place them directly on the grill.

4. Grill the chicken for about 5-7 minutes on each side or until fully cooked and slightly charred.

5. While the chicken is grilling, prepare the garlic sauce. In a small bowl, combine mayonnaise, minced garlic, yogurt, lemon juice, salt, and pepper. Mix until smooth.

6. Warm the pita bread or flatbreads on the grill for a minute or two on each side.

7. Assemble your shawarma: Place a warm pita bread on a plate, add some grilled chicken, sliced tomatoes, cucumbers, onions, and lettuce. Drizzle the garlic sauce over the top.
